I was going to start cooking a new recipe every week and posting it on my blog. We got busy and I haven’t been trying new recipes recently. We have been eating a lot of our old favorites. I decided that I would go ahead and post one of our favorites because it will be new to others. One of my favorite things to make in the fall is Tortilla Soup. This is a recipe that I got from a family friend in high school. It is pretty quick and very delicious. The best part is I can make a huge pot and then freeze the left overs.  If you try it let me know what you think.

Tortilla Soup with Chicken and avocados

6 Tblsp oil

8 6-inch corn tortillas cut into bite size pieces

1 medium onion chopped

1/2 cup fresh cilantro minced

6 garlic cloves minced

28 oz can diced tomatoes in juice

8 cups low salt chicken broth

1 1/2 tsp ground cumin

1 Tblsp chili powder

4 bay leaves

4 skinless boneless chicken brest halves

1/2 tsp cayenne pepper

directions

1. Heat oil in a large sauce pan over high heat and add tortilla pieces, onion, cilantro and garlic. Saute for 3 minutes.

2. Stir in tomatoes with juices and bring to a boil.

3. Add Broth cumin, chili powder, and bay leaves and return to a boil.

4. Reduce eat to simmer and chicken and cayenne pepper. Let simmer until chicken is cooked (about 15 minutes).

5. Remove bay leaves and shred chicken.

6. Top with avocado slices, sour cream and monetary jack cheese and serve.
