Fix and Freeze Recipes

I wanted to do an update on our fix and freeze stufff. We have eaten most of it already and everything this time has been really good. Our full menu this time is listed below.

Beef Enchiladas–Chicken Verde Enchiladas–Texas Potato Casserole–Lemon Chicken Marindade–KebabsPlayoff Burgers–Ice Cream Pie–Beef Fajitas

Our favorites so far are the Kebabs and Ice Cream Pie. I thought I would go ahead and post a couple more of the Fix and Freeze recipes in case anyone is interested in making them. My goal is to eventually get them all on the blog. The Texas potatoe recipe is a family favorite..Jason’s family makes a similar dish called cheesy potatoes. I keep forgetting to take pictures of this stuff as we eat it..I promise I will next time.

TEXAS POTATO CASSEROLE  
16 oz 1/2 pkg. frozen hash browns, thawed
1/4 c. butter, melted
1/2 tsp. salt
1/4 tsp. pepper
1/2 can cream of chicken soup
1/2 pt. sour cream
1/4 c. chopped onion
1/4 lb. grated sharp cheese
Dash Tabasco

TOPPING:

1 c. crushed corn flakes
1/8 c. butter, melted

 Directions: Combine all ingredients except topping. Pour into 9″x12″ baking dish. Sprinkle crushed corn flakes over top and drizzle melted butter over all and freeze:

To Prepare:

1. Thaw in fridge overnight.

2. Bake at 375 for 45 min or until cheese is bubbly

 

Beef Enchiladas

 1 package flour tortillas

1 lb ground beef

1 small onion, diced

1-2 bell peppers of choice, diced

1 enchilada sauce mix package

1.5 cups water

1-8 oz can tomato sauce

2-ish cups of cheddar cheese

(Jalapenos or other peppers can be added to make it spicy)

Directions 

1.Brown meet with onion and peppers. Drain fat.

 2. Mix enchilada sauce package with 1.5 cups water and 1-8oz can of tomato sauce.

3.Boil then reduce heat and simmer until thickened. Mix 1/2 cup of the sauce in with the meet mixture.

4.Lay out tortillas, spoon meat mixture into them and roll tightly. Arrange in baking dish.

5.  Pour remaining sauce over rolled tortillas and top with cheddar cheese.

6. Freeze

To Cook:

1.Thaw overnight in the refridgerator.

2. Bake at 350 degrees for 25 minutes or until sauce is bubbly and cheese is melted.

Cook and Freeze Fajitas

1 lb sirloin steak

2 tablespoons lime juice

2 tablespoons white wine vinegar

1 tablespoon salad oil

1 teaspoon dried oregano

2 cloves garlic, crushed

6 flour tortillas

1 package mixed vegetables, frozen (fajita blend)

Directions:

1. Place steak in quart-sized freezer bag; combine lime juice, white wine vinegar, salad oil, oregano, and crushed garlic cloves; add to meat.

2. Freeze.

Items needed at home when preparing

1/2 cup salsa

Flour tortillas

Optional: Sour cream, cheese avacado, tomato and cilantro,

 To Prepare:

1. Thaw steak in marinade

2. Remove Steak and pan-sear in hot pan.

3. Cook until medium rare and remove from pan

4. In the same pan add frozen vegetables and marinade; cover and cook until vegetables are crisp-tender

5. While vegetables are cooking slice meat into thin slices against the grain

6. Add Cooked vegetables

7. Add 1/2 cup sals to meet and veggies and heat through

8. Serve in warmed flour tortilla with avacado cubes, chopped tomato or fresh cilantro.
