Green Chili Cheesecake aka Mexican Cheesecake

I have never done a link up before but I have enjoyed reading recipes from other people at Kellys Korner the past couple of weeks so I thought I would add my own on this week. This week’s show us your life is favorite appetizers. One of my all time favorite appetizers is green chili cheese cake or sometimes called Mexican Cheese cake. It is supposed to be a dip but we have a couple of people in our family that like it so much they just eat it with a fork.

Green Chili Cheesecake

1 1/2 cups tortilla chips, crushed (I use Fritos)
3 tablespoons butter, melted
2 8-ounce packages cream cheese
2 eggs
1 4-ounce can chopped green chilis

4 oz colby cheese

4 oz montery jack cheese

1 fresh jalapeno pepper, cored, seeded and diced
1/4 cup sour cream

Garnish:

1/2 cup chopped tomatoes
1/4 cup chopped black olives
1/4 cup chopped green onions

Directions: 1.Mix Butter and crushed chips and press into a spring form pan that has been greased. 2. Bake for 15 min at 325 degrees. 3. Mix cream cheese, eggs, green chilis, colby cheese and montery jack cheese and spread on top of crust. 4. bake for 25 min at 325 degrees. 5. Let cool and top with sour cream, chopped tomatoes, green onions and black olives. 6. Cut in pie slices and serve with chips.
