Menu Planning

Sometimes menu planning is fun. When I can sit down with my diet coke at the kitchen island that is perfectly clean and flip through magazines and Pinterest looking for new recipes to try.

In reality menu planning doesn’t normally look like that. In reality I am scribbling down ideas for dinners on a scratch piece of paper as I sit at the kitchen island that is covered in stuff as I’m about to head out the door. No matter how chaotic or organized it is I try to menu plan every week. My main motivation for this is to avoid going to the store more than once with two four-year olds..let me tell you that is an experience.

Here is our menu plan for this week. We are doing some easy dinners because Jason has meetings several nights.

Saturday:
Lunch-Sandwiches and Soup
Dinner-Jason and I going out. Kids Mac n cheese and frozen chicken

Sunday:
Lunch-? Quick stuff around the house (frozen pizza, lean cuisine etc.)
Dinner-Brisket with Pioneer Woman’s au gratin potatoes, green beans and rolls.

Monday:
Lunch-Out
Dinner-Baked Chicken and Cheesy Rice with steamed broccoli

Tuesday:
Lunch-Kids packed lunches for School (lunch meat, gold fish, fruit)
Dinner-Chicken Fried Rice with egg rolls

Wednesday:
Lunch- Kids:Chicken nuggets, gold fish, baby carrots and celery Mom: Lean Cuisine with carrots and celery
Dinner-Leftovers

Thursday:
Lunch- Kids packed lunches for school
Dinner-Omelets with fruit and Bagels

Friday:
 Lunch-Cheese and crackers, Summer Sausage and fruit
 Dinner-Steak with Blue Cheese Potatoes and Roasted Asparagus

As I was menu planning today the kids told me they were playing “rappers.” I was confused at how they knew what a rapper was and then I discovered that they were wrapping presents and singing…they were “wrappers.” We watched the skit from Saturday Night Live with Justin Timberlake and Jimmy Fallon about gift wrapping on Christmas and I’m thinking they were paying more attention that I realized.
